I almost never have what the rest of my family has at dinner every night. My mom goes out of her way to make sure that I have my own meals tailored to my sensitive needs at dinner time. She prepares food in bulk and freezes it for me so that I always have options if she's not home to help with ideas for meals. Anyone who knows my mom is not shocked by this in the least. She is always doing for the ones she loves. Everyday I would come home from work and she would be clicking away on the computer in search of recipes that she could alter to meet my needs, alternatives for ingredients I couldn't have, reviews on different products- the list goes on. I can say with 100% confidence that if my mother wasn't the creative, supportive chef that she is, I would surly be emaciated. Since March alone I've lost 13 pounds just from the elimination process. I don't know what I would eat to keep me healthy and satisfied without her creativity. She comes up with all kinds of ideas for ways to combine the foods I can have and makes everything delicious. Now that I have these recipes and ideas for keeps, I'll be able to use them forever. Without my mom's help, I may have fallen off my horse a long time ago. I can't take 100% of the credit for my success on this crazy health journey. I have my mother to thank, too. At some point, I plan to write a book about this sensitive life of mine and when I do, my mom is going to be all over the recipes section of it, obviously.
