What you'll need:
2 cups chicken broth
2 to 3 large carrots, grated
1 large onion, chopped
1/4 cup parsley, chopped
2 tablespoons basil, chopped
2 to 3 large eggs
1/4 to 1/2 cup Romano cheese (optional for flavor)
Light olive oil for frying
Salt & pepper
What you'll need to do:
Rinse quinoa in a strainer. Pour chicken broth and quinoa into a pot and bring to a boil. Cover and simmer on medium low for 15 minutes until all the liquid is absorbed. While you're waiting for the quinoa to cook, grate 2-3 large carrots and dice 1 large onion. Once quinoa is cooked, spread it out evenly on a cookie sheet to cool. Saute onions and carrots in a frying pan with olive oil until softened. Sprinkle lightly with salt and pepper. Cool carrot and onion mixture. Once cooled, combine quinoa and veggies into a bowl. Add 1/4 cup chopped parsley, 2 tablespoons chopped basil, and 1/4 cup Romano cheese to bowl. Mix ingredients together. Scramble 2 to 3 large eggs and add them to the bowl. Add salt and pepper for taste. Coat base of frying pan with light olive oil. Heat oil. Scoop the quinoa mixture with 1/4 cup measure and drop into hot oil. Flatten into patties with a spatula. Here comes the tricky part- using 2 spatulas, (because they break easily) carefully flip each patty over to brown them on both sides. Once cooked, drain on paper towels, let cool on a wire rack, and store in a plastic container or serve right away- nice and hot! :) |
